Molded Borsch

  1. In saucepan, sprinkle gelatin on cold water to soften.
  2. Place over low heat, stirring until gelatin is dissolved.
  3. Remove from heat; stir in consomme, liquid from beets and lemon juice.
  4. Chill until slightly thickened.
  5. Fold in beets and 1 tablespoon onion.
  6. Pour into 4 cup ring mold; chill until firm.
  7. Unmold on lettuce.
  8. Fill center of mold with sour cream, garnish with remaining onion.
