Chili Chocolate Pork Chops

  1. Preheat your oven to 375 F.
  2. Wash and dry your chops.
  3. Salt and pepper one side and sprinkle the smoked paprika evenly over both chops on the same side.
  4. Rub in the seasonings.
  5. Warm the olive oil in a small oven-safe skillet.
  6. Add butter and turn up the heat to medium-high.
  7. When butter stops sizzling, add the chops, seasoned side down.
  8. Brown the chops on that side for about 3 minutes.
  9. While the chops are browning, season the top side with salt and pepper.
  10. Turn chops over.
  11. After 2 minutes, drain grease out of the pan, add the wine and sprinkle the trail mix on top along with the red chili flakes, distributing evenly.
  12. Put the skillet in the preheated oven for about 10 minutes.
  13. Then test the meat with an instant meat thermometer.
  14. It should be at 145 to 150 F before removing the skillet from the oven.
  15. Remove the chops to a platter, scraping all the goodness on top.
  16. Let them sit for 5 -10 minutes and the temperature will increase to the perfect degree of doneness.
  17. Garnish with the cilantro and serve with love!
