Cornbread Dressing

  1. Prepare cornbread with corn muffin mix, adding the milk and 1 egg as directed on package.
  2. Bake as directed; cool.
  3. Melt butter in medium skillet.
  4. Add celery and onion; cook, stirring frequently, until tender.
  5. Place in large bowl.
  6. Beat remaining 3 eggs in medium bowl.
  7. Add broth, salt and pepper.
  8. Add to celery mixture; mix well.
  9. Crumble cornbread.
  10. Add to celery mixture; mix lightly.
  11. Spoon into greased 11x8-inch baking dish.
  12. Bake at 350F for 1 hour.
