Cornbread Dressing
- 1 pkg. (8-1/2 oz.) corn muffin mix
- 1/3 cup milk
- 4 eggs, divided
- 1/4 cup (1/2 stick) butter
- 4 celery stalks, chopped
- 1 medium onion, chopped King Sooper's 1 lb For $0.99 thru 02/09
- 1 can (14-1/2 oz.) chicken broth
- salt and pepper to taste
- Prepare cornbread with corn muffin mix, adding the milk and 1 egg as directed on package.
- Bake as directed; cool.
- Melt butter in medium skillet.
- Add celery and onion; cook, stirring frequently, until tender.
- Place in large bowl.
- Beat remaining 3 eggs in medium bowl.
- Add broth, salt and pepper.
- Add to celery mixture; mix well.
- Crumble cornbread.
- Add to celery mixture; mix lightly.
- Spoon into greased 11x8-inch baking dish.
- Bake at 350F for 1 hour.
