Pimento Cheese Tea Sandwiches

  1. In a medium-sized bowl combine everything except the last two ingredients.
  2. Lay about 15 slices of bread on a cutting board and slather the pimento spread in a thin layer all over them but try not to cover the crusts (youre going to cut them off later).
  3. Place a slice of pickle on top of each sandwich if desired.
  4. Top with the other 15 slices of bread.
  5. Place the sandwiches on a baking sheet and wrap it with plastic wrap.
  6. Refrigerate until ready to serve.
  7. Put the sandwiches on a cutting board, and cut the crust off of each.
  8. Cut each sandwich diagonally to make two smaller sandwiches.
  9. Serve chilled.
