Pimento Cheese Tea Sandwiches
- 3 ounces, weight Cream Cheese
- 1/2 cups Mayonnaise
- 1 cup Grated Monterey Jack Cheese
- 1/2 cups Grated Sharp Cheddar Cheese
- 3 Tablespoons Diced Pimentos
- 2 teaspoons Grated Onion
- 1/4 teaspoons Kosher Salt
- 1/4 teaspoons Black Pepper
- 30 slices Whole Grain Bread
- 15 slices Bread And Butter Pickles (optional)
- In a medium-sized bowl combine everything except the last two ingredients.
- Lay about 15 slices of bread on a cutting board and slather the pimento spread in a thin layer all over them but try not to cover the crusts (youre going to cut them off later).
- Place a slice of pickle on top of each sandwich if desired.
- Top with the other 15 slices of bread.
- Place the sandwiches on a baking sheet and wrap it with plastic wrap.
- Refrigerate until ready to serve.
- Put the sandwiches on a cutting board, and cut the crust off of each.
- Cut each sandwich diagonally to make two smaller sandwiches.
- Serve chilled.
