Bean and Barley Salad
- 2 qt. cooked barley
- 1 qt. eggplant, sliced, grilled and cut into medium dice Safeway 1 ea For $1.28 thru 02/09
- 1 qt. crumbled feta cheese
- 1 qt. fresh green beans, blanched, cut into 1/2-inch pieces
- 2 cups KRAFT Signature Italian Vinaigrette Dressing
- 2 cups canned butter beans, drained
- 2 cups canned pinto beans, drained
- 2 cups roasted red peppers, medium dice
- 2 cups canned chickpeas (garbanzo beans), drained
- 2 cups grape tomatoes, cut in half King Sooper's 1 lb For $0.99 thru 02/09
- 1 cup fresh basil, chiffonade
- 1 cup Italian parsley, chopped
- to taste salt and black pepper
- Combine all ingredients.
- Refrigerate several hours or until chilled.
