Fergie'S Potato Salad
- 1 hard-boiled egg
- 1/2 green pepper, chopped
- 8 to 10 medium potatoes, boiled in jacket until firm
- 1 very small carrot, chopped
- 1/4 tsp. salt to taste
- 1/8 tsp. ground black pepper
- 2 stalks celery, chopped
- 3/4 c. sweet pickles, chopped
- 1/2 small yellow onion, chopped
- 2 small radishes, chopped
- 1 Tbsp. mustard
- 1 to 2 Tbsp. sugar
- 1/8 c. pickle juice
- Mix green pepper, small carrot, celery, sweet pickles, onions, radishes, salt, pepper, sugar and pickle juice in mixing bowl. Add small cubes of potatoes to bowl.
- Stir and mix with other ingredients.
- Add one chopped or diced hard-boiled egg.
- Stir. Add mustard, stir and mix with long prong fork and big spoon.
- Add mayonnaise as directed.
- Stir with fork and big spoon.
- Add dry leaves for decoration if desired.
- Cover and chill overnight.
