Italian Vegetable Medley
- 1-1/2 qt. onions, cut into thin slices
- 3 Tbsp. fresh garlic, minced
- 1/2 cup oil
- 1-1/2 gal. zucchini, cut into 1/4-inch-thick slices
- 1-1/2 qt. canned diced tomatoes, drained
- 1-1/2 qt. yellow peppers, chopped
- 1-1/4 qt. KRAFT Italian Dressing
- 1-1/2 cups KRAFT Grated Parmesan Cheese
- Saute onion and garlic in hot oil in large saute pan on medium-high heat 2 min.
- or until onion is tender.
- Add zucchini, tomatoes, peppers and dressing; mix well.
- Reduce heat to medium-low; simmer 10 to 12 min.
- or until zucchini is tender, stirring occasionally.
- Sprinkle with Parmesan cheese.
- Serve warm or at room temperature.
