Mocha Truffles

  1. Melt 4 cups chocolate chips in microwave or double boiler.
  2. Remove and blend in cream cheese, coffee granules and water.
  3. Chill until firm enough to shape.
  4. (about 1 hour) Shape into balls about 1 inch in diameter.
  5. Set on wax paper and place in freezer until very firm (about 1 hour).
  6. In microwave or double boiler, melt remaining 2 cups of chocolate chips and shortening.
  7. Stir until smooth.
  8. Drop 5 or 6 frozen balls into the chocolate mixture and stir quickly.
  9. Immediately remove the balls and place on wax paper lined cookie sheet.
  10. Allow to cool and harden.
  11. If desired, melt a few squares of white coating and drizzle over the top.
  12. Store in a cool, dry place.
