Sig's Fruit and Nut Coleslaw
- 1 large carrot
- 1 handful each of dried ready to eat apricots,raisins,cranberries and some dried or fresh green or black grapes
- 1/2 cup each of hazelnuts and walnuts
- 7 tbsp light mayonnaise
- 5 tbsp natural yogurt
- 1 pinch each salt and black pepper
- 250 grams white cabbage
- shred cabbage and carrot,place in large bowl.
- Chop apricots,walnuts and hazelnuts roughly,add parsley, raisins,cranberries and grapes.
- In separte bowl mix yogurt and mayonnaise, season with salt and pepper.Add the mayonnaise mixture to cabbage and toss together.
- Cool for at least one hour.
- my idea and creation, I serve this often with prawns .
