Bran and Carrot Muffins
- 2 eggs
- 1 12 cups sugar
- 12 cup oil
- 2 cups natural bran
- 2 cups milk
- 1 teaspoon salt
- 1 cup raisins
- 2 12 teaspoons bicarbonate of soda
- 1 teaspoon vanilla essence
- 2 12 cups flour
- Cream the egg and sugar.
- Add the oil, vanilla and milk.
- Beat well.
- Add the flour, salt , bran and bicarbonate of soda.
- Mix.
- Add the raisins.
- Leave to stand overnight.
- Stir in the morning.
- Bake at 180C for 20 minutes.
- Variations: Add grated carrots, grated apple or nuts You can add apple puree in place of half of the milk.
