Muffuletta Salad
- 1/2-lb. medium-size shell pasta
- 1/2-lb. Provolone cheese, cut into 1/4-inch dice
- 1/4-lb. Salami, diced
- 1/4-lb. Mortadella, diced
- 1/4-lb. boiled ham, diced
- 10 jumbo black olives, pitted and sliced
- 10 queen olives (large green), stuffed with pimentos, sliced
- 1 small onion, chopped
- 1 small rib celery, chopped
- 1/4 c. fresh flat-leaf Italian parsley
- 2 Tbsp. fresh thyme leaves
- 2 small cloves garlic, finely chopped
- Muffuletta salad:
- Cook pasta shells according to pkg. directions until firm but tender, Drain well, rinse with cold water, drain well again.
- Place pasta in a large bowl.
- Add the Provolone, Salami, Mortadella, ham, olives, onions, celery, parsley, thyme and garlic.
- Toss until well blended.
