Pork Loin in Peanut Sauce

  1. Heat oven to 350F.
  2. Heat 1 Tbsp.
  3. oil in large skillet on medium-high heat.
  4. Add meat; cook 5 min.
  5. or until browned on all sides, turning occasionally.
  6. Transfer to roasting pan.
  7. Add 1 cup broth; cover.
  8. Bake 1-1/4 hours or until meat is done (160F), basting every 30 min.
  9. Meanwhile, cook and stir onions and garlic in grill pan or skillet on medium-high heat 5 min.
  10. or until crisp-tender.
  11. Remove from pan; peel garlic.
  12. About 30 min.
  13. before meat is done, blend remaining broth, tomato sauce, ancho peppers, chipotle pepper, 1/2 cup nuts, onions and garlic in blender until smooth.
  14. Heat remaining oil in medium saucepan on medium heat.
  15. Add prepared sauce; cook 15 min., stirring occasionally.
  16. Chop remaining nuts.
  17. Slice meat; place on platter.
  18. Drizzle with sauce; top with nuts, cheese and cilantro.
