Taco Style Spuds
- 6 baking potatoes
- 1 lb. ground beef
- 1/4 c. shredded carrot
- 1/4 c. sliced green onion
- 3/4 c. water
- 1/2 (6 oz.) can (1/3 c.) tomato paste
- 2 tsp. chili powder
- 1/2 tsp. dried oregano, crushed
- 1/8 tsp. garlic powder
- 3/4 c. shredded lettuce
- 3/4 c. dairy sour cream
- 1/3 c. shredded Cheddar cheese
- 1 1/2 c. taco sauce
- Prick potatoes with a fork.
- Bake in a 425u0b0 oven for 40 to 60 minutes or until tender.
- Meanwhile, in a 10-inch skillet, cook ground beef, shredded carrot and sliced green onion until meat is browned and vegetables are tender.
- Drain well.
- Stir in water, tomato paste, chili powder, oregano and garlic powder.
- Bring to boiling; reduce heat.
- Cover and simmer for 15 minutes.
