Crisp Salmon in Rice Paper with Asian Au Jus

  1. Season each fish with cilantro, 1/2 teaspoon each.
  2. Dip rice paper, one at a time, in hot water.
  3. Place seasoned salmon in middle.
  4. Roll and seal packet.
  5. Add 3 teaspoons sesame oil to saute pan.
  6. When hot, sear salmon.
  7. Turn when brown.
  8. Bake in 400F (200C).
  9. oven for 6 to 8 minutes.
  10. In a small pot, add 2 cups soy sauce, 6 ounces sake, lemon grass, star anise, 2 teaspoons cilantro, garlic, and ginger.
  11. Bring to boil.
  12. Add vegetables and serve.
  13. Garnish with fried vermicelli noodles.
