Roasted Garlic Shrimp Scampi
- 2 Tablespoons Roasted Garlic, Mashed (from 1 Large Bulb Or 2 Small Bulbs)
- 1 cup Butter
- 2 Tablespoons Fresh Lemon Juice
- 1 pound Shrimp, Peeled And Deveined
- 1 pound Linguine, Cooked
- Salt And Pepper, to taste
- Preheat oven to 400 degrees F. Wrap garlic bulbs in foil and roast for 30-35 minutes.
- Remove from oven, cool slightly and push out roasted garlic from cloves.
- Mash with a fork.
- Melt butter in a large skillet over medium heat.
- Add roasted garlic and lemon juice and cook for 3 minutes.
- Add in shrimp and cook for 3 to 5 minutes until shrimp turn pink and are cooked.
- Pour sauce over cooked linguine and toss.
- Season with salt and pepper and serve.
