Chicken Chinese Recipe
- 2 whole chicken breasts or possibly 1 cut up fryer
- 2 c. sliced celery
- 1 c. mushrooms, canned or possibly fresh
- 1 green pepper, sliced
- 1/2 c. broth from chicken
- 1 can cream of mushroom or possibly cream of chicken soup
- 2 tbsp. diced pimento
- 1 (5 ounce.) can chow mein noodles or possibly rice noodles
- 1 c. cashew nuts (optional)
- Salt & pepper to taste
- Cook the chicken for 10-12 min on high in a 3 qt covered casserole.
- Remove from oven and let cold.
- Remove meat from the bones and place back in the casserole dish with the broth.
- Combine the remaining ingredients except the noodles and nuts.
- Cook 10 min on high, then add in the noodles and nuts; cook for 2 min more.
- Stir and serve.
- Any 2 c. of cooked meat: beef, pork, turkey, shrimp are delightful substitutes in this recipe.
