Galopita
- 1 quart milk
- 1 1/4 cup sugar
- 1 dash salt
- 1/2 cup farina
- 3/4 cup butter
- 10 eggs, separated
- 1 tsp vanilla
- Place milk, one cup of sugar and salt in saucepan and cook over low heat until milk is warmed
- Slowly add faring, stirring constantly until mixture is smooth and thick
- Add butter and remove from heat to cool
- Beat egg folks with 1/4 cup sugar until light and creamy
- Beat egg whites until stiff
- Fold into egg till mixture
- Slowly fold egg mixture into cooled farina mixture
- Pour into 9 X 13 greased pan and bake at 350* for 30 min
- Cool and sprinkle with confectioners sugar and cinnamon
- Cut in squares and serve
