BBQ Chicken & Rice Tostadas

  1. Preheat oven to 350F.
  2. Spray both sides of tortillas with cooking spray; place in single layer on baking sheet.
  3. Bake 10 minutes or until crisp and lightly browned.
  4. Meanwhile, bring water to boil in large saucepan.
  5. Stir in rice; cover.
  6. Remove from heat; let stand 5 minutes.
  7. Stir in chicken, corn and barbecue sauce.
  8. Return to medium heat; cook and stir 5 minutes or until heated through.
  9. Spoon evenly onto tortillas; sprinkle with cheese.
