Green Tomato Butter

  1. Peel tomatoes.
  2. Chop into large pieces.
  3. Cover with vinegar.
  4. Let stand 8 hours or overnight.
  5. Drain well.
  6. Add all other ingredients.
  7. Cook slowly (can use a crock pot) until very thick (approximately 4 hours if using a large pot or longer in a crock pot).
  8. If not thickening sufficiently, add Certo and continue stirring and cooking an additional 10 minutes or so.
