Delicious Pina Colada Cake

  1. Blend all ingredients except coconut.
  2. Beat 4 minutes at medium speed.
  3. Stir in coconut.
  4. Pour into 2 greased and floured 9 inch layer cake pans.
  5. Bake at 350 degrees for 25-30 minutes.
  6. Frosting.
  7. Combine all ingredients except whipped topping and coconut; beat until blended.
  8. Fold in whipped cream.
  9. Frost.
  10. Sprinkle with coconut.
  11. Chill.
