Middle-Eastern Bread Salad
- 2 tbsp. olive oil
- 2 tbsp. fresh lemon juice
- 2 tbsp. chopped fresh mint leaves
- 3/4 tsp. minced garlic
- 3/4 tsp. salt
- 1/4 tsp. Freshly ground pepper
- 3 pita breads
- 8 c. torn assorted salad greens (we used arugula, watercress and romaine)
- 3 plum tomatoes
- 1 small yellow pepper
- 1/2 medium cucumber
- 4 oz. Ackawi (see Note) or feta cheese
- 1/4 c. chopped flat-leaf (Italian) parsley leaves
- Whisk dressing ingredients in a large serving bowl.
- Add pita and remaining ingredients.
- Toss to mix and coat.
- Serve immediately.
- Bread in a salad isn't all that unusual when you think of how popular croutons have become.
