Martha Washington Party Cake Recipe
- 2 1/4 c. sifted cake flour
- 1 1/2 c. sugar
- 2 1/2 teaspoon baking pwdr
- 1 teaspoon salt
- 3/4 c. shortening
- 3/4 c. lowfat milk
- 1 teaspoon vanilla
- 1 1/2 teaspoon almond extract
- 3 Large eggs, unbeaten
- Sift flour, sugar, baking pwdr and salt into mixing bowl.
- Drop in shortening.
- Add in 1/2 c. lowfat milk, flavoring and 1 egg and beat 200 strokes (2 min by hand or possibly on mixer at low speed).
- Scrape bowl and beater.
- Add in remaining lowfat milk and 2 Large eggs and beat 200 strokes.
- Bake in 2 deep 9" greased layer pans in moderately warm oven, 375 degrees for 25 to 30 min.
- Spread Cherry Party Frosting between layers and on top and sides of cake.
- Swirl the frosting into graceful peaks on top of cake and place halves of maraschino cherries around rim of cake about 2" apart.
- Cherry Party Frosting: Place 2 egg whites, unbeaten, 1 1/2 c. sugar, 5 Tbsp.
- water, 1 tsp.
- light corn syrup and 1/8 tsp.
- salt in top of double boiler and mix thoroughly.
- Place over rapidly boiling water and beat constantly with beater till mix will hold a peak (about 7 min).
- Remove from warm water, add in 1 tsp.
- vanilla and 1/2 tsp.
- almond extract and beat till cold.
- Just before spreading, carefully mix in 18 maraschino cherries, cut in pcs and 12 marshmallows, cut in pcs into frosting.
- Looks and tastes great!
