Spice Mix: Garam Masala

• 3 inch cinnamon sticks
• 2 teaspoons cardamom seeds (measure after removing pods)
• 1 teaspoon cloves, whole
• 1 teaspoon mace

1. Roast spices separately and grind in a blender, a coffee grinder or with a mortar and pestle; add grated nutmeg, if used.
