Tex-Mex Burger Quesadillas

  1. Saute the ground beef.
  2. Part way through, add the bell pepper and onion and continue cooking until the vegetables are crisp-tender Add the salt and pepper.
  3. Drain the grease and add the cumin, chili powder, and paprika.
  4. Spoon the ground beef mixture onto half of a tortilla(s).
  5. Sprinkle with Monterey jack and cheddar.
  6. Fold the tortilla over.
  7. Brush both sides with oil.
  8. Cook in a heavy frying pan over medium hot heat.
  9. Turn after several minutes.
  10. Continue cooking just until the cheese melts.
  11. Serve hot.
