Popover Pizza Recipe
- 1 pound grnd beef (optional turkey or possibly pork can also be used)
- 1 lg. onion, minced
- 1 teaspoon crushed dry oregano
- 1/2 to 1 c. sliced mushrooms; optional
- 1/2 c. tomato pcs, canned; optional
- Black olives; optional
- 1 (6 ounce.) can tomato paste
- 1 c. minced green pepper; optional
- 2 Large eggs
- 1 c. flour
- 1 c. lowfat milk
- 1 teaspoon veg. oil
- Cook meat and onion till meat is brown; drain.
- Add in tomato paste, oregano, 3/4 c. water, 1/2 tsp.
- salt and pepper if you like.
- Add in optional ingredients.
- Transfer to 13 x 9 inch baking pan.
- Top with Mozzarella cheese.
- Beat together Large eggs, lowfat milk, flour, and oil till smooth.
- Pour over meat mix proportionately and spread carefully with spatula to middle and edges.
- Bake at 350 degrees for 40 min or possibly till golden brown.
- Sprinkle with Parmesan cheese, if you like.
- Cut into wedges.
