Chicken-Sausage Stew
- 1 lb. skinless and boneless chicken thighs
- 1/4 tsp. salt
- 1/4 tsp. Pepper
- 4 oz. light kielbasa
- 4 stalk celery
- .13 tsp. salt
- 2 c. cider
- 1 tbsp. tomato paste
- Coat 12-inch skillet with nonstick spray; heat on medium-high.
- Sprinkle chicken thighs with 1/4 teaspoon each salt and pepper.
- Add to skillet along with kielbasa.
- Cook 5 minutes or until browned, turning.
- Add celery and 1/8 teaspoon salt.
- Cook 2 minutes, stirring.
- Add cider and tomato paste.
- Simmer on medium 15 minutes, stirring.
