Good Carb Fettuccine Witih Fresh Tomatoes
- 3 cups diced fresh tomatoes or 3 medium fresh tomatoes
- 12 cup finely chopped fresh basil
- 1 -2 tablespoon extra virgin olive oil
- 2 teaspoons crushed garlic
- 12 teaspoon black pepper, coarsely ground
- 12 teaspoon salt
- 8 ounces fettuccine or 8 ounces linguine
- 14 cup grated parmesan cheese
- Combine the tomatoes, basil, olive oil, garlic, black pepper and salt in a medium-sized bowl.
- Toss to mix well and let sit at room temperature for 30 minutes.
- Cook the pasta al dente according to package directions.
- Drain the pasta and return it to the pot.
- Add the tomato mixture to the pasta and toss to mix well.
- Serve immediately, topping each serving with a tablespoon of the Parmesan cheese.
