Sweet Onion Relish

  1. Position knife blade in food processor bowl; add onion quarters, a few at a time.
  2. Process until finely chopped.
  3. Combine 12 cups onion and salt in a large bowl.
  4. Let stand 30 minutes. Drain squeezing all excess juice from mixture.
  5. Place pickling spice on a 6-inch square of cheesecloth.
  6. Tie with string. Combine onion, spice bag, sugar and remaining ingredients in a large Dutch oven.
  7. Bring to a boil; reduce heat and cook about 30 minutes or until mixture is thick.
  8. Remove and discard spice bag. Pack onion mixture into hot jars, filling to 1/2-inch from top. Remove air bubbles.
  9. Wipe jar rims.
  10. Cover at once with metal lids and screw on hands.
  11. Process in boiling water bath 10 minutes.
