Sweet Onion Relish
- 10 lb. sweet onions, cut into quarters
- 1/4 c. salt
- 2 tsp. pickling spice
- 2 1/4 c. sugar
- 2 c. apple cider vinegar
- 2 Tbsp. diced pimiento
- 1/2 tsp. ground turmeric
- Position knife blade in food processor bowl; add onion quarters, a few at a time.
- Process until finely chopped.
- Combine 12 cups onion and salt in a large bowl.
- Let stand 30 minutes. Drain squeezing all excess juice from mixture.
- Place pickling spice on a 6-inch square of cheesecloth.
- Tie with string. Combine onion, spice bag, sugar and remaining ingredients in a large Dutch oven.
- Bring to a boil; reduce heat and cook about 30 minutes or until mixture is thick.
- Remove and discard spice bag. Pack onion mixture into hot jars, filling to 1/2-inch from top. Remove air bubbles.
- Wipe jar rims.
- Cover at once with metal lids and screw on hands.
- Process in boiling water bath 10 minutes.
