Banana Layer Cake With Cream Cheese Frosting Recipe
- 2 c. Mashed bananas -- about 4
- 1/4 c. Lowfat milk
- 1 c. Shortening
- 2 tsp Vanilla
- 2 c. Sugar
- 4 x Large eggs -- unbeaten
- 4 1/2 c. All-purpose flour -- sifted
- 4 tsp Baking pwdr
- 1 tsp Salt FROSTING
- 1/2 c. Butter
- 8 ounce Cream cheese
- 1 tsp Vanilla
- 1 lb Sugar Lowfat milk -- optional
- Combine bananas and lowfat milk.
- Cream together shortening and vanilla; gradually add in sugar, beating till light and fluffy.
- Add in Large eggs, one at a time, beating well, mix till light and fluffy.
- Sift together flour, baking pwdr, and salt.
- Add in alternately with bananas and lowfat milk to creamed mix, beating some after each addition.
- Three 9" pans, greased.
- Bake: 350F for 30-35 minutes.
- Cream Cream Frosting: Combine butter, cream cheese, and vanilla.
- Cream well.
- Gradually add in powdered sugar (sift if lumpy), beating well.
- If mix is too thick to spread, add in a small amount of lowfat milk.
