Pineapple Muffins
- 2 cups all-purpose flour
- 2 tsp. baking powder
- 1/2 tsp. Baking soda
- 1/2 tsp. salt
- 1/2 cup firmly packed brown sugar
- 1 egg, well beaten
- 1 container (8 oz.) sour cream
- 1 can (8 oz.) crushed pineapple, undrained
- 1/3 cup melted shortening
- 1/2 cup chopped pecans
- Combine flour, baking powder, soda, salt and brown sugar in a large bowl; stir well.
- Combine egg, sour cream, pineapple and shortening.
- Make a well in center of dry ingredients; add pineapple mixture and stir until just moistened.
- Stir in pecans.
- Spoon into greased muffin pans, filling 2/3 full.
- Bake at 400F for 20 to 25 minutes or until brown.
