Pineapple Muffins

  1. Combine flour, baking powder, soda, salt and brown sugar in a large bowl; stir well.
  2. Combine egg, sour cream, pineapple and shortening.
  3. Make a well in center of dry ingredients; add pineapple mixture and stir until just moistened.
  4. Stir in pecans.
  5. Spoon into greased muffin pans, filling 2/3 full.
  6. Bake at 400F for 20 to 25 minutes or until brown.
