Old-Fashioned Apple Butter Cake
- 2 1/4 C. flour
- 1 tsp. baking soda
- 1/2 tsp. salt
- 1/2 C. butter
- 1 C. sour cream
- 1 tsp. baking powder
- 1 C. sugar
- 2 eggs
- 3/4 C. apple butter
- 1 tsp. vanilla extract
- Sift together flour, baking powder, soda and salt.
- Cream sugar and butter until fluffy and light.
- Add eggs and beat until blended. Add apple butter and vanilla.
- Add sifted dry ingredients slowly, alternately with sour cream.
- Mix until well blended.
- Pour 1/2 cake batter into a greased, floured loaf pan.
- Mix together:
- 1/2 C. sugar, 1/2 tsp. nutmeg, 1 tsp. cinnamon and 1/2 C. chopped walnuts.
- Sprinkle half this topping over mixture, then pour remaining batter over top and sprinkle rest of topping on top layer.
- Bake at 350u0b0 for 40-50 minutes. Serve warm or cold with whipped cream or topping.
