Lemon Cake Pie

  1. Grate rind from clean lemon.
  2. Juice the
  3. lemon;
  4. add to grated rind
  5. and set aside.
  6. Preheat oven to 325u0b0 (glass pan) or
  7. 350u0b0 (metal
  8. pan).
  9. Blend sugar, egg yolks, margarine and salt thoroughly.
  10. Add
  11. lemon juice and rind and flour;
  12. blend well. Gradually stir in milk.
  13. Beat egg whites to soft peaks. Fold
  14. in egg whites to lemon-milk mixture.
  15. Pour into unbaked pie
  16. crust and bake 1 hour.
  17. Insert table knife;
  18. blade comes out
  19. clean
  20. if done.
  21. Cake
  22. comes
  23. to
  24. top,
  25. lemon custard on bottom.
