Smoked Salmon and Lentil Salad

  1. Cook bacon in 2-gallon stockpot (or 3-quart saucepan for trial recipe) 4 to 5 minutes or until slightly browned, stirring occasionally.
  2. Add onion; cook 4 to 5 minutes or until tender, stirring occasionally.
  3. Add lentils and water.
  4. Bring to boil.
  5. Reduce heat to medium-low; simmer 1 to 1-1/2 hours or until lentils are soft, yet still firm to the bite.
  6. Drain; discard liquid.
  7. Place lentil mixture in refrigerator to cool.
  8. Mix lentil mixture, salmon and dressing.
  9. Spoon sour cream into squeeze bottle.
  10. Squeeze sour cream, in spider-web design, over individual servings of salads.
