Smoked Salmon and Lentil Salad
- 2 cups OSCAR MAYER Bacon, chopped Rite Aid 2 For $7.00 thru 02/06
- 2 cups onions, chopped King Sooper's 1 lb For $0.99 thru 02/09
- 2-1/2 qt. dry lentils
- 3 gal. water
- 1-1/2 qt. smoked salmon, sliced
- 1 qt. cherry tomatoes, quartered
- 2 cups KRAFT Golden Italian Dressing
- 1 cup sour cream
- Cook bacon in 2-gallon stockpot (or 3-quart saucepan for trial recipe) 4 to 5 minutes or until slightly browned, stirring occasionally.
- Add onion; cook 4 to 5 minutes or until tender, stirring occasionally.
- Add lentils and water.
- Bring to boil.
- Reduce heat to medium-low; simmer 1 to 1-1/2 hours or until lentils are soft, yet still firm to the bite.
- Drain; discard liquid.
- Place lentil mixture in refrigerator to cool.
- Mix lentil mixture, salmon and dressing.
- Spoon sour cream into squeeze bottle.
- Squeeze sour cream, in spider-web design, over individual servings of salads.
