Cheesy Gnocchi with Grilled Vegetables
- 625g ready made gnocchi
- 1 tablespoon oil
- 1 zucchini, cut into chunks
- 1 medium eggplant, sliced Safeway 1 ea For $1.28 thru 02/09
- 1 red capsicum, sliced
- 2/3 cup reduced fat evaporated milk
- 1/3 cup KRAFT Easy Cheese Cream Cheese Spread
- 2 cloves garlic, crushed
- 1/4 cup chives, roughly chopped
- salt and pepper to taste
- Cook gnocchi according to pack instructions.
- Drain.
- Heat the oil on a grillplate and chargrill the vegetables in batches.
- Set aside and keep warm.
- Add the evaporated milk, cream cheese spread and garlic to a saucepan, bring to the boil.
- Reduce heat and stir through the gnocchi, chives and seasoning until heated through.
- Serve the gnocchi topped with the grilled vegetables.
