Stuffed Peppers Sicilian
- 3 medium green peppers
- 3 Tbsp. finely chopped onion
- 2 Tbsp. finely chopped celery
- 1 small clove garlic, minced
- 1 Tbsp. cooking oil
- 1/2 lb. ground veal or 1/2 lb. ground beef
- 1/4 c. tomato puree
- 1/4 tsp. salt
- 1/8 tsp. black pepper
- 1 Tbsp. grated Parmesan cheese
- Slice tops from peppers; chop tops and reserve.
- Scoop out seeds and membrane from peppers.
- In skillet cook onion, reserved green peppers, celery and garlic in hot oil until tender.
- Add meat; cook until browned.
- Spoon off excess fat.
- Stir in tomato puree, salt and pepper.
- Sprinkle salt inside pepper shells. Spoon meat mixture into the peppers.
- Sprinkle cheese over filling.
- Place in small baking dish.
- Bake, uncovered, in 350u0b0 oven for 35 minutes.
- Makes 3 servings, 169 calories per serving.
