Chicken Fricassee
- 1 broiler-fryer chicken
- 1 can condensed chicken broth
- 12 small onions, peeled and stuck with 4 cloves
- 1 small carrot, diced
- 3 Tbsp. chopped parsley
- 2 tsp. salt
- 3 peppercorns
- 1 bay leaf
- 1/4 c. butter
- 1/4 c. flour
- 3/4 c. heavy cream
- 1/2 lb. mushrooms, drained
- 1/4 tsp. thyme
- 1/2 tsp. paprika
- Brown chicken in butter until golden.
- Arrange chicken in casserole dish.
- Add next 7 ingredients.
- Bake 1 hour and 45 minutes at 350u0b0.
- Remove onion with cloves and bay leaf.
- Mix butter and flour and drop by bits into casserole, stirring well as you go.
- Add cream, mushrooms and thyme.
- Bake 15 more minutes. Sprinkle with paprika.
- Serve.
