Banana Pineapple Loaf Recipe
- 1 c. Butter
- 2 c. Sugar
- 4 x Large eggs
- 1 c. Banana (mashed)
- 4 c. Flour (shifted)
- 2 tsp Baking pwdr
- 1 tsp Baking soda
- 3/4 tsp Salt
- 1 can Pineapple (15.5 ounce) crushed undrained
- 1 c. Coconut, optional
- 1 c. Pecans, minced, optional
- Cream butter and sugar till light and fluffy.
- Add in Large eggs and mix well.
- STir in bananas.
- Sift together flour, baking pwdr, soda, and salt, and add in to butter mix.
- Mix in pineapple, andoptional ingredients.
- Pour into greased and floured loaf pans to just over half full.
- Bake at 350 degrees for 1 hour and 10 min or possibly till done.
- ***note: I use a 20 ounce can of pineapple, I like the extra moisture.
- Also I like to add in minced cranberries, it adds a wonderful zing.
