South Carolina-Style Mustard Sauce
- 3/4 cup distilled white vinegar
- 1/2 cup beef or chicken stock
- 1/2 cup finely chopped onion
- 1/2 cup seeded minced jalapeno chilies
- 1/2 cup yellow mustard or Dijon-style mustard
- 1/4 cup honey mustard or brown deli-style mustard
- 1/4 cup light corn syrup (or to taste)
- 2 tablespoons molasses
- 1 teaspoon black pepper
- 1/2 teaspoon salt
- 1/4 teaspoon cayenne pepper
- Combine all ingredients in saucepan, and bring to boil.
- Reduce heat, and simmer until thick and richly flavored, about 10 minutes, stirring occasionally.
- Taste for seasoning, adding additional salt or corn syrup as desired.
- This sauce goes great with just about anything.
