Oven Baked Cranberry Barbecued Chicken
- 2 1/2 to 3 lb. boneless chicken, cut up in bite size pieces
- 1/2 c. chopped onion
- 1 (8 oz.) can whole berry cranberry sauce
- 1 Tbsp. Worcestershire sauce
- 1/4 c. chopped celery
- 1/4 c. cooking oil
- 1/2 c. catsup
- 2 Tbsp. lemon juice
- 1 Tbsp. prepared mustard
- 1 Tbsp. brown sugar
- 1 Tbsp. vinegar
- In skillet, brown chicken in cooking oil.
- Season with salt and pepper.
- Place in a large baking dish.
- In same skillet, cook onion and celery until tender, but not brown.
- Add remaining ingredients.
- Heat through and skim off excess fat.
- Pour sauce over chicken.
- Bake, uncovered, at 325u0b0 for 1 1/4 hours, basting 2 to 3 times during baking.
- Makes 3 to 4 servings.
