Southern Banana Tapioca Pudding

  1. Mix first 4 ingredients in large saucepan; let stand 5 min.
  2. Bring to full boil on medium heat, stirring constantly.
  3. Remove from heat; stir in vanilla.
  4. Cool 20 min.
  5. (Pudding will thicken as it cools.)
  6. Arrange half the wafers on bottom and up side of 2-qt.
  7. serving bowl; top with layers of half each of the banana slices and pudding.
  8. Repeat all layers.
  9. Cover surface of pudding with plastic wrap.
  10. Refrigerate 3 hours.
  11. Just before serving, remove plastic wrap; cover with COOL WHIP.
