Onion Marmalade
- 3 cups white sugar
- 3 cups white vinegar
- 6 brown onions, halved lengthways
- 2 bay leaves
- 6 peppercorns
- Put all ingredients into large, deep saucepan.
- Stir till sugar dissolves and mixture boils.
- Simmer, stirring every now and again for 45 minutes.
- Onions should be translucent.
- Liquid should be nearly all evaporated.
- Set aside to cool to room temp then spoon into sterilized jars and seal.
