Chinese Fried Rice
- 3 c. cooked rice made from long grain rice
- 2 eggs beaten with pinch of salt
- 4 oz. fresh shrimp, shelled and cleaned
- 1 tsp. soy sauce
- 1 tsp. Chinese wine
- dash of pepper
- 4 oz. diced ham or Cantonese roast pork
- 4 oz. frozen green peas, cooked
- 4 dried mushrooms, cooked and diced or 4 oz. fresh mushrooms, washed and diced (optional)
- 1 medium size onion, chopped or 1/2 c. minced celery
- 2 spring onions, chopped
- 4 Tbsp. oil
- 1/4 tsp. pepper
- 1 tsp. sesame oil
- 2 tbsp. dak soy sauce or to taste
- Season shrimp with soy sauce, wine and pepper.
- Heat 1 tablespoon oil in
- nonstick pan or wok; scramble eggs.
- Break egg into small pieces and set aside.
- Add 1 tablespoon oil in pan, stir-fry shrimp and spring onion in hot oil for two minutes.
- Then add ham/pork, green peas, mushrooms, onion, celery, sesame oil and pepper.
- Continue to cook over medium heat for 3 to 4 minutes, then set aside.
