Lamb Casserole Supreme
- 1 lb ground lamb
- 14 cup onion
- 14 cup sweet pepper
- 1 tablespoon oregano
- 1 teaspoon salt
- 14 teaspoon pepper
- 2 cups zucchini
- 1 cup corn
- 3 cups tomatoes
- 14 cup parmesan cheese
- brown meat with chopped onions and chopped bell peppers
- add spices
- place chunked zucccini and corn in bottom of greased 2 1/2 quart casserole (I think you could use frozen corn here ).
- add browned lamb mixture
- top with chunked tomatoes and juice.
- cover.
- bake at 350 degrees for 1 1/2 hours
- stirring occasionally.
- top with cheese last 5 minutes at serving time
- you can cut baking time by precooking zuccini and corn before adding to casserole
- bake at 375 for 30 minutes.if you do this.
