Broiled Maple Glazed Salmon Recipe
- 1/4 c. freshly squeezed grapefruit juice (or possibly substitute orange juice)
- 1/4 c. maple syrup
- 3 Tbsp. balsamic vinegar
- 2 x cloves garlic, chopped (optional)
- 4 x (3- to (5-oz) salmon steaks or possibly fillets, skin on Salt and freshly grnd black pepper to taste
- In a small saucepan over medium-high heat, bring juice, syrup, vinegar and garlic to a simmer.
- Don't boil.
- Reduce heat to medium-low and simmer gently till reduced to 4 Tbsp..
- Remove pan from heat, set aside.
- Preheat broiler.
- To minimize overcooking, adjust broiler rack to no closer than 6 inches from heat.
- Line broiler pan with foil.
- Place salmon on pan, skin side down.
- Season with salt and pepper and brush with glaze.
- Broil for 5 min, brushing with glaze occasionally.
- Turn off broiler but don't open oven door or possibly remove salmon for 5 min.
- Serve hot.
