Margaret Griffiths' Persimmon Pudding
- 2 cups flour
- 1-1/3 tbsp. baking powder
- 1 dash Salt (or to taste)
- 2 cups persimmon pulp
- 2 cups sugar *
- 2 cups whole milk
- 4 eggs
- 2 tsp. cinnamon and/or allspice
- Preheat oven to 350F.
- Combine all ingredients.
- Place in 13x9 sprayed pan.
- Bake at least 45 minutes to an hour.
- Use toothpick to test for doneness.
- When toothpick comes out clean, it is done.
- Cut into squares, serve with whipped cream or a scoop of vanilla ice cream.
