Spinach And Ham Roll-Ups
- 1 can cream of celery soup
- 2 Tbsp. Dijon mustard
- 1 (10 oz.) pkg. frozen chopped spinach, thawed and pressed dry with paper towels
- 1/4 c. unsifted flour
- 1 c. dry bread crumbs
- 8 oz. sour cream
- 1 c. quick cooking rice
- 8 oz. small curd cottage cheese
- 2 eggs
- 1/2 c. finely chopped onion
- 18 slices boiled ham
- paprika
- Preheat oven to 350u0b0.
- In a small bowl, mix soup, sour cream and mustard.
- In medium bowl, combine 1/2 cup soup mixture, rice, spinach, cheese, eggs, onion and flour.
- Mix well.
- Place about 2 heaping tablespoons of the spinach mixture on each ham slice. Roll up and place close together, seam side down in an 11 x 7-inch baking dish.
- Spoon remaining soup mixture over ham rolls.
- Top with crumbs and paprika.
- Bake, uncovered, 30 to 35 minutes or until hot.
- Let stand 10 minutes before serving.
