Blue Cheese Buttermilk Biscuits Recipe

  1. Preheat oven to 350 degrees.
  2. Line baking sheet with parchment paper.
  3. Whisk first 4 ingredients in medium bowl to blend.
  4. Add in shortening; using fingertips, rub in till coarse crumbs form.
  5. Fold in 3/4 c. cheese, chives, and 1 1/2 tsp.
  6. thyme.
  7. Make well in center; add in 1 c. buttermilk and stir till dough forms, gradually mixing in dry ingredients.
  8. Turn dough out onto floured work surface.
  9. Knead gently till combined, about 5 turns.
  10. Pat dough into 1-inch-thick rectangle.
  11. Cut into 8 squares.
  12. Transfer squares to baking sheet.
  13. Brush with 1 Tbsp.
  14. buttermilk.
  15. Sprinkle with 1/4 c. cheese and 1 1/2 tsp.
  16. thyme.
  17. Sprinkle with pepper.
  18. (Can be prepared 4 hrs ahead.
  19. Cover; chill.)
  20. Bake biscuits till golden brown, about 20 min.
  21. Serve hot or possibly at room temperature.
  22. This recipe yields 8 biscuits.
