Blue Cheese Buttermilk Biscuits Recipe
- 2 1/2 c. unbleached all-purpose flour (or possibly whole-grain pastry flour)
- 2 tsp baking pwdr
- 3/4 tsp coarse salt
- 1/2 tsp baking soda
- 2/3 c. chilled solid vegetable shortening cut 1/2" cubes
- 1 c. crumbled blue cheese
- 1 Tbsp. minced fresh chives
- 1 Tbsp. minced fresh thyme
- 1 c. buttermilk plus
- 1 Tbsp. buttermilk Freshly-grnd black pepper to taste
- Preheat oven to 350 degrees.
- Line baking sheet with parchment paper.
- Whisk first 4 ingredients in medium bowl to blend.
- Add in shortening; using fingertips, rub in till coarse crumbs form.
- Fold in 3/4 c. cheese, chives, and 1 1/2 tsp.
- thyme.
- Make well in center; add in 1 c. buttermilk and stir till dough forms, gradually mixing in dry ingredients.
- Turn dough out onto floured work surface.
- Knead gently till combined, about 5 turns.
- Pat dough into 1-inch-thick rectangle.
- Cut into 8 squares.
- Transfer squares to baking sheet.
- Brush with 1 Tbsp.
- buttermilk.
- Sprinkle with 1/4 c. cheese and 1 1/2 tsp.
- thyme.
- Sprinkle with pepper.
- (Can be prepared 4 hrs ahead.
- Cover; chill.)
- Bake biscuits till golden brown, about 20 min.
- Serve hot or possibly at room temperature.
- This recipe yields 8 biscuits.
- Comments: Tender biscuits which are rich and flavorful.
