Mini Fruit Cakes
- 1 c. golden raisins
- 1 c. chopped nuts
- 2 c. candied fruit
- 1 c. chopped nuts
- 1/2 c. butter
- red and green cherries
- 1 Tbsp. rum flavoring
- 1/2 c. apple juice, divided
- 1 tsp. vanilla
- 1/2 tsp. salt
- 1/4 tsp. baking soda
- 2 c. flour, divided
- 1/2 c. powdered sugar
- 3 eggs
- 1 c. sugar
- Preheat oven to 300u0b0. Combine fruit and nuts with 1/4 cup flour; set aside. Cream together butter and sugar. Beat in eggs, one at a time. Mix in vanilla. Combine remaining 1 3/4 cups flour, salt and baking soda. Add to creamed mixture alternately with 1/2 cup apple juice. Start and end with flour mixture. Stir in fruit and nuts. Spoon batter into 2 (9 x 5-inch) loaf pans. Bake for 60 to 70 minutes or until toothpick inserted comes out clean. Cool. Makes 2 fruit cakes.
