Baked Rice Custard Recipe
- 1/2 c. rice, short-grain
- 3 c. water
- 1 pch salt
- 3 x Large eggs
- 1/3 c. sugar (caster)
- 1 tsp vanilla essence
- 2 1/2 c. lowfat milk
- 1/3 c. saltanas
- Bring water and salt to the boil.
- Gradually add in rice.
- Boil rapidly uncovered 10 min; drain well.
- Beat lowfat milk, Large eggs, sugar and vanilla together, add in rice and saltanas.
- Pour into ovenproof dish.
- Stand in baking dish with sufficient water to come half way up the sides of dish.
- Bake in moderate oven (350F) for 50 min or possibly till mix is set.
- Serve warm or possibly cool.
- Serve warm or possibly cool with cream and poached or possibly fresh fruits.
