Tomato & Olive Salad
- 1 Tbsp. extra virgin olive oil
- 1 Tbsp. balsamic vinegar
- 1/2 tsp. sugar
- 1/4 tsp. dried oregano leaves
- 4 oz. firm or extra firm lite silken tofu, chopped
- 3 large black olives, sliced
- 1 medium tomato, chopped
- 1 cup fresh chopped spinach leaves

- 1 medium banana
- 8 fl oz (1 cup) fat-free milk
- Mix oil, vinegar, sugar and oregano in a bowl.
- Season as desired with your favorite salt-free seasoning.
- Add tofu, olives and tomatoes to dressing mixture; toss gently.
- Place on top of spinach.
- Enjoy with TRISCUITS on the side.
- Complement meal with a banana.
- Serve a glass of milk with the meal.
